Ingredients
Overnight
- 1 c Oat Bran, (steel cut or rolled are fine too)
- 8 tbsps Chia Seeds
- 13.5 ozs Coconut Milk, Light
- 20 ozs Canned Pineapple, (crushed)
- 1 c Almond Milk
- 1 c Carrot, Grated
Optional Toppings
- 2 tbsps Walnuts, chopped
- Shredded Coconut, unsweetened
- 2 tbsps Greek Yogurt, vanilla
Directions
In 4 sealable containers, divide the chia seeds and oat bran evenly. Stir to blend.
Divide the coconut milk, almond milk, and crushed pineapple between the 4 containers. If using pineapple chunks, remove the chunks and divide the juice evenly between the containers, then divide the chunks. Divide grated carrot between containers. Cover and let sit overnight or at least 2hrs until the oats are soften.
Top a spoonful or 2 of Cabot’s 2% Vanilla Greek Yogurt then sprinkle with chopped walnuts and coconut.
